White Bean Houmous with Garlic and Toasted Sesame Seeds
200g/7oz canned cannellini beans, 2 large garlic clove, peeled and crushed, 2 tbsp tahini (sesame seed paste), Half a lemon, juice only, ? tsp ground cumin, Sea salt and black peppe, 150ml olive oil
What to do:
Drain the cannellini beans and place in a food processor with all the remaining ingredients except the oil. Blend to a smooth paste, adding a little oil at a time to make the smooth paste like consistency.
Taste and season, add a little more salt and lemon juice if required. This is best prepared overnight and chilled.
To serve, sprinkle a little chopped parsley, and toasted pine nuts or sesame seeds this is optional. Drizzle a little more olive oil over the top.
Tips: You can serve this with sliced or whole Chantenay Carrots and other vegetables. This is also good with Arab flat-bread or warm pitta bread. I also garnish it with charred tomatoes and coriander.
