Just grab and go… no waste or mess, these small, sweet British-grown carrots they are great for making the most of the summer weather. Pre-sliced and prepared they are ideal for dips or just crunching by themselves and are an ideal size for little hands.
Chantenay carrots, like other carrots, contain more vitamin A than any other vegetable or fruit. Just one 80g portion of Chantenay supplies more than the RDA (recommended daily allowance) of vitamin A, and contains more folate than an avocado, an abundant supply of Vitamin C and is an excellent source of Vitamin K. All these are known active ingredients promoted in numerous skin care products too.
The Chantenay snacks are the brain child of a co-operative of 10 growers based in Nottinghamshire so now not only can you enjoy cooked Chantenay you can celebrate summer with fresh crunchy carrots.As well as picnics they are ideal for snacking on the go, travelling and trips out.
The Chantenay Snack Packs come as single 80g pot with a tasty houmous dip for 85p, or in a pack of four 65g snap pots for ?1, those looking for great value for money, ideal for families. The snack packs are made up of carrots which have been neatly sliced lengthways in order to maintain the carrots natural shape.
The 80g pots count towards one of the five recommended daily portions of fruit and vegetables. Eating raw carrots help to fight off the mid afternoon slump and leave you feeling fuller for longer. Carrots are also great for dental health as they kill harmful germs in the mouth and prevent tooth decay, while providing some great exercise for the mouth and jaw.
To celebrate National Picnic week TV chef Rachel Green has created a special dip recipe that is perfect for Chantenay carrots Roasted Beetroot Dip….
- 500g medium size Beetroot, cleaned, trimmed and left unpeeled
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 200g Greek yoghurt
- A good slug of olive oil
- 2 cloves garlic, peeled and crushed
- 1 tsp caster sugar
- Juice of half a lemon
- Sea salt and black pepper
Pitta breads, to serve
Preheat oven to 200?C/400?F/Gas 6
Wrap each beetroot in foil and place in a baking dish and roast for 45minutes to 1 hour or until you can easily insert a knife into the flesh of the beetroot. Leave to cool, unwrap and peel off the skins.
In a dry frying pan roast the cumin and coriander seeds over a low heat until you can just smell their fragrance; taking care not to burn them. Crush the seeds in a pestle and mortar or using a rolling pin in a small bowl. Place all the ingredients in a food processor and pulse till smooth and season well. Taste and add more lemon if required.
Serve with pitta bread and sliced or whole Chantenay carrots and other crisp vegetables crudities.
If you do not want to roast the beetroot you can use ready cooked beetroot. You can use already ground cumin and coriander, to save you roasting the seeds, but the dip will not have such a fragrance to it. You can also add a handful of fresh mint or coriander leaves to it when you are blitzing it.
